Dried apricot is another product which Turkey has dominance on the production and exportation all over the world. Apricot cultivation, which is spread in most of the agricultural regions of Turkey, finds its best environment in the province of Malatya which is located in the Central Eastern Anatolian Region. Main demand for dried apricot is stemmed from Russian and European markets.

There are two types, which are natural and bleached, eight different sizes, and four quality classes, which are extra, first, second, and industrial classes.

After the harvest, apricots are laid down under the sun to begin the dehydration process. Generally 7 to 20 days is enough for well dehydrated apricots. Apricots lose their shiny yellow color in time and turn into brown or dark brown color. Dried apricots processed by this method is called natural or sun dried.

After the harvest, the yellow color of apricots is sheltered with the help of sulphur dioxide. Then apricots are laid down under the sun to begin the dehydration process. Generally 7 to 20 days is enough for well dehydrated apricots. Additional sulphur dioxide is applied if more bright yellow color is desired.
